I used to use the "squeezing the brake method" by trying to hold the brake lever with one hand, and tightening the bolts with the other. Needless to say this wasn't very reliable, sometimes it would work and others not. The trick I've found is to bungee your brake lever to your handlebar, that way it can maintain constant pressure and you can use both your hands to slowly tighten up the bolts. Works every time for me.
